My Very Best Vegan Oatmeal Cookies

These are really the perfect oatmeal cookie. Moist, chewy, soft, and full of deep brown sugary flavor. Customize them by using your favorite dried fruits, white or dark chocolate chips, nuts, or any combination. Adjust the spices to your taste as well. 


2 sticks butter

1 c dark brown sugar 

1/2 c granulated sugar 

1 t vanilla 

2 T non dairy milk

2 t cinnamon 

1/2 t cardamom (optional)

1/2 t Penzeys Baking Spice (optional)

1/2 t salt

1 t baking soda

1 1/2 c flour

3 c old fashioned oats

1 c dried cranberries (or whatever you prefer)


Preheat oven to 350. Cream butter with sugars, then beat in milk. Add vanilla and spices. Slowly add dry ingredients until everything is combined. Taste for spice level and add more if desired. Stir in any mix-ins. Scoop onto parchment lined baking sheets and bake until just underbaked. They should no longer by glossy, but will still feel squishy to the touch. Let cool completely before transferring.
