Vegan Movie Night Cookies
I first made these a year ago, veganizing a recipe I came across online somewhere. I’ve since made additional changes to them to try to improve them, and I think they’re perfect now. Here’s the recipe:
Ingredients:
2 sticks butter
1/2 C. Sugar
1/2 C. Brown sugar
1 C. Peanut butter
3 T. Milk
2 t. Vanilla
2.5 C. Flour
1 t. Baking soda
1 t. Salt
2.5 C. Air-popped popcorn
1/2 C. Chocolate chips
1/2 C. Craisins
1/4 C. Lightly salted peanuts
(Feel free to adjust or substitute the last three ingredients however you prefer. Use candies, different fruit, chopped pretzels, whatever)
Cream the first six ingredients until smooth. Slowly add flour, baking soda, and salt. Gently stir in popcorn and additional ingredients. If the dough feels too soft, chill for an hour before scooping and baking. The dough will be loose and your dough balls will want to fall apart. Just pinch them together before baking, because they will melt and spread and hold together while baking. Bake at 350* until set and no longer super squishy, and just barely browned at the edges. Let cool completely or they will crumble apart.
